Get your baking on with these Clean Vanilla Raspberry Cupcakes.

Clean Vanilla Raspberry Cupcakes with Lemon Vanilla Frosting > (8 mini cupcakes)

Cupcake Ingredients

  • 1/4 cup almond meal
  • 1 scoop of vanilla protein powder
  • Drop of vanilla essence
  • 1/3 cup unsweetened apple sauce
  • 3 tablespoons of stevia
  • 1 egg
  • 1/4 cup of raspberries

Lemon Vanilla Frosting Ingredients

  • 1 cup cashews
  • 1 tablespoon of coconut oil
  • 1 tablespoon of agave or honey
  • Juice of 1/2 a lemon
  • Drop of vanilla essence
  • 1 tablespoon of vanilla protein powder
  • 3 tablespoons of water

Directions

  • Mix all the ingredients for the cupcakes in a bowl then place in mini tins
  • Cook in the oven for 15 minutes at 170C (keeping an eye on them)
  • Whilst they are cooking, blend all the ingredients for the frosting in a high speed blender and place in fridge to harden for 20 minutes
  • Once the cup cakes have cooled down, ice them with a piping bag. You can garnish them with a small fresh raspberry on top
