Clean Vanilla Raspberry Cupcakes with Lemon Vanilla Frosting > (8 mini cupcakes)
Cupcake Ingredients
- 1/4 cup almond meal
- 1 scoop of vanilla protein powder
- Drop of vanilla essence
- 1/3 cup unsweetened apple sauce
- 3 tablespoons of stevia
- 1 egg
- 1/4 cup of raspberries
Lemon Vanilla Frosting Ingredients
- 1 cup cashews
- 1 tablespoon of coconut oil
- 1 tablespoon of agave or honey
- Juice of 1/2 a lemon
- Drop of vanilla essence
- 1 tablespoon of vanilla protein powder
- 3 tablespoons of water
Directions
- Mix all the ingredients for the cupcakes in a bowl then place in mini tins
- Cook in the oven for 15 minutes at 170C (keeping an eye on them)
- Whilst they are cooking, blend all the ingredients for the frosting in a high speed blender and place in fridge to harden for 20 minutes
- Once the cup cakes have cooled down, ice them with a piping bag. You can garnish them with a small fresh raspberry on top
